| Indonesian Minang-Style Chicken Curry |
Uda Uni (Brother and
Sister),
Chicken curry is often
a family favorite because the chicken is exceptionally tender compared to
frying. Furthermore, this dish is highly sought after by lovers of rich,
coconut-milk-based soups full of authentic Indonesian spices.
Cooking Tips for Minang-Style Chicken Curry
Before Uda Uni start cooking, here are a few tips to ensure your chicken curry turns out incredibly delicious and suits your preferences:
Adjusting Coconut Milk
Consistency: Traditional Minang curry uses quite a thick coconut milk. However,
for Uda Uni who prefer a lighter curry, you can reduce the amount of coconut
used and replace the remaining volume with water.
Controlling the Spice
Level: This Minang-style curry uses a significant amount of chili to create a
delicious, spicy kick. It is best to use a mix of ground red chili paste and
roughly crushed bird's eye chilies. The red chili paste gives the dish a
beautiful, vibrant color, while the bird's eye chilies provide the heat. If Uda
Uni prefer a milder version, you can simply use the red chili paste alone.
Choosing Your Chicken:
This recipe calls for standard broiler chicken, but Uda Uni can also use free-range
chicken. If using free-range chicken, boil it for about 30 minutes to make the
meat tender before adding it into the curry broth. Alternatively, you can cook
it longer over low heat to keep the curry broth from reducing too quickly.
Spice Usage: This
chicken curry tastes lighter and fresher than rendang because it uses fewer dry
spices, yet remains deeply spiced from the fresh ingredients.
Imagining the tender
chicken pieces combined with the thick, savory, and mildly spicy coconut milk
is sure to make Uda Uni feel hungry in an instant! This chicken curry is
perfect for lunch or dinner with loved ones. The aroma of leaves, such as
turmeric leaves and lime leaves cooked in the coconut milk, will fill your
kitchen with the rich, aromatic scent of Indonesian culinary culture.
In this dish, the chili
paste is traditionally well-ground. However, if it isn't readily available
where Uda Uni live can grind the chilies at home, even if the texture isn't
perfectly smooth. Don't worry -- it will still taste amazing for Uda Uni and
your family!
Don't be nervous if Uda Uni are a beginner cook, as this recipe is very straightforward to follow. Let's
get right into the ingredients!

chilies, roughly crushed
* 1 tsp salt
* ½ tsp chicken
bouillon powder
Aromatic

* 1 knob (thumb-sized)
galangal, lightly bruised
* 8 kaffir lime leaves,
center ribs removed
* 1 turmeric leaf, torn
roughly
* 1 stalk lemongrass,
lightly bruised
* 1 piece asam kandis
(dried garcinia)
Wet
Spices (To Be Ground):
* 8 shallots
* 3 cloves garlic
* ½ thumb-sized ginger
* ½ thumb-sized
turmeric
* ½ tsp pepper
* 1 tsp coriander
Instructions
1. Portion the Chicken:
Cut the chicken into 8, 10, or 12 pieces, depending on your preference, Uda
Uni.
2. Prepare the Broth:
Place a large pot or wok on the stove. Pour in the coconut milk, and add the
ground spice paste, red chili paste, bird's eye chilies, galangal, kaffir lime
leaves, turmeric leaf, lemongrass, salt, and bouillon powder.
3. Bring to a Simmer:
Turn the stove to medium heat. Bring the coconut milk to a boil while stirring
continuously to prevent the coconut milk from curdling. Make sure the coconut
milk is fully boiling before adding the chicken to prevent the curry from
becoming too watery.
4. Cook the Chicken:
Once the coconut milk is boiling, add the chicken pieces and cook until tender
while stirring occasionally.
* For 8 or 10 pieces: cook for about 45
minutes.
* For smaller pieces: cook for approximately
30 minutes.
5. Add the Asam Kandis:
Five minutes before the dish is done, add the asam kandis. If Uda Uni cannot
find it, you can substitute it with the juice of 2 small limes or 1 tsp of
vinegar.
