Ingredients

Here are the ingredients Uda Uni need to prepare:

* 1 whole chicken

* 1 liter of coconut milk (from 1 coconut)

* 2 tbsp chili paste (ground red chili)

* 20 green bird's eye chilies, roughly crushed

* 1 tsp salt

* ½ tsp chicken bouillon powder

 

Aromatic Leaves:*

* 1 knob (thumb-sized) galangal, lightly bruised

* 8 kaffir lime leaves, center ribs removed

* 1 turmeric leaf, torn roughly

* 1 stalk lemongrass, lightly bruised

* 1 piece asam kandis (dried garcinia)

 

Wet Spices (To Be Ground):

* 8 shallots

* 3 cloves garlic

* ½ thumb-sized ginger

* ½ thumb-sized turmeric

* ½ tsp pepper

* 1 tsp coriander

 

Instructions

1. Portion the Chicken: Cut the chicken into 8, 10, or 12 pieces, depending on your preference, Uda Uni.

2. Prepare the Broth: Place a large pot or wok on the stove. Pour in the coconut milk, and add the ground spice paste, red chili paste, bird's eye chilies, galangal, kaffir lime leaves, turmeric leaf, lemongrass, salt, and bouillon powder.

3. Bring to a Simmer: Turn the stove to medium heat. Bring the coconut milk to a boil while stirring continuously to prevent the coconut milk from curdling. Make sure the coconut milk is fully boiling before adding the chicken to prevent the curry from becoming too watery.

4. Cook the Chicken: Once the coconut milk is boiling, add the chicken pieces and cook until tender while stirring occasionally.

   * For 8 or 10 pieces: cook for about 45 minutes.

   * For smaller pieces: cook for approximately 30 minutes.

5. Add the Asam Kandis: Five minutes before the dish is done, add the asam kandis. If Uda Uni cannot find it, you can substitute it with the juice of 2 small limes or 1 tsp of vinegar.
